Abbey’s Easy Paleo Sorbet

Ok, my family wanted something sweet last night and since everyone has been missing ice-cream I thought why don’t I try a sorbet or homemade paleo ice-cream.  So I took fresh frozen strawberries and raspberries I had in my freezer. I freeze fresh berries often so they don’t go bad when my family doesn’t eat them fast enough. Its perfect for smoothies! Anyway – I added the fruit to the blender, a can of whole coconut milk, honey, cinnamon and a tad of stevia. Should be thick after blending. If not add more fruit. As the mixture blended I put martini glasses in the freezer to chill. Then scooped berry mixture into chilled glasses and sprinkled coconut crystals on top and SERVED!  It was awesome! The coconut milk gave it more substance like a gelato.  Needless to say I will make again and definitely make for my parents when they come to dinner. I have gotten to the point that I am experimenting with my paleo cooking. There is a definite art to it. Sometimes its a winner and… sometimes a big loser. So my advise is to try stuff – look at original recipes and see what you might substitute. You might be pleasantly surprised!!
